About this Cook
I love to cook & take pride in creating my own recipes. I am a stay at home mother of 2 girls-a 2 year old & a 1 year old. I am admittedly not the best baker but I am slowly learning. I try to buy as little as possible prepackaged food & make everything that I can from scratch.

I conquered Junior's Devil's Food Cheesecake. By far the best dessert I have ever eaten!
My cooking tragedies
When I was 7 or 8 months pregnant I made a chicken pot pie that I had made several times before. I read the recipe wrong & put 2 C chicken broth in the mix rather than the 1/2 C it called for. I didn't realize my mistake until I started serving it at the table. I was so upset & embarrassed & being pregnant, I started crying. My husband ate half of the pot pie & said it was the best one he has had. Months later (after I was no longer pregnant) he confessed that he had only eaten it to make me feel better :)

Oat Snack Mix
So delicious & addicting! Hard to stop eating it once you start. I needed a snack mix recipe for a family reunion that had no nuts in it. I found this & omitted the walnuts & it was a smash hit! Make sure to keep stirring the cereal mixture as it cools-mine turned into one huge blob. Also don't add the choc raisins too early-I thought it had cooled enough but they still melted. Even so-still will make it again & again!

Honey Crystal Almonds
After buying honey cinnamon almonds at a street faire, I decided I wanted to try & make my own. I found this recipe to be the closest to the ones I bought & they turned out great. My husband says he even liked these better! The only changes I made was to use 3 C almonds rather than 2 & I added about 1 T cinnamon to the sugar. Perfect for snacking!

Playgroup Granola Bars
I ran across this recipe by mistake & thought it sounded good. After reading the reviews I decided to make a double batch & I am so glad I did! The whole family loves them. They are so healthy but my 2 year old calls them cookies! My 1 year old gobbles them up & says "more, more" & even my husband loves them. The only changes I made to the recipe were to use only 1/2 C brown sugar, used wheat flour instead of white, applesauce rather than oil, & added in 1/2 C sunflower seeds & 1/2 C flax seeds. Also definitely check bars after 20 minutes. Mine only took 25 minutes to be done. Every bite my girls take, I smile knowing how healthy these are for them!
