Mint Chicken

This chicken was great! The name sounds a little scary, but it was an awesome, fresh taste. I'd reduce the butter a little bit though. Tip: before you squeeze your lemon, put it in hot water for a few minutes, then roll between your hands. You'll get the most juice this way.

Cake Balls

I finally got a chance to make these last night. They weren't as difficult as everyone made them sound. They're a little time consuming, but not too bad. Instead of a whole can of frosting, I used about half. I used devil's food cake, chocolate frosting dipped in melted dark chocolate wafers that you buy in the candy section at Michael's. I also bought the cheap chocolate dipping set that worked nicely. Very yummy! My husband isn't a big sweet eater, but he liked them a lot!

Candy Coated Pecans

These pecans are delicious. Per another reviewer's suggestion, I added cinnamon/sugar and honey to the mix -- nice addition. I didn't beat my egg white long enough though, so it took longer for these to bake.

Raspberry Coconut Layer Bars

Of course I can never just follow the recipe. I added about a cup more jam, which actually turned out to be too much. Lesson learned: stick with the recommended amount of jam. Very good, but very rich too. Be sure to grab a glass of milk with these.
