Summer Vegetable Ratatouille
I just throw it all into a pot. I strained it a bit and used it as a filling for a vegetable calzone with provolone cheese. It disappeared faster than the meat calzone!

Cheesy Ham and Hash Brown Casserole
I made this for our Volunteer Brunch. I've already been asked by 5 teachers for the recipe! It was so easy and so very, very good!
