Pumpkin Rice Pudding

I used brown rice for this recipe and it seemed like the recipe called for way too much water and too much milk because the rice didn't come close to absorbing all the liquid. I drained out a lot of milk. However it still came out pretty good. I wouldn't say it was amazing but it is editable.

Twice Baked Sweet Potatoes with Ricotta Cheese

These sweet potatoes came out excellent! I have been looking for a dish to bring to thanksgiving and this just might be it! I left out the sage but followed the rest of the recipe. The shallots add a great taste to the sweetness of the sweet potatoes and brown sugar. Also this dish is somewhat healthy for you. I will be making this one again soon!

Chicken with Garlic, Basil, and Parsley

The chicken came out juicy and tender. I left out the salt and pepper and only added 1 tsp of basil and parsley to the top of the chicken. Also i drizzled balsamic vinegar before baking it and added a little bit of fat free mozz cheese in the last 10 min of baking. I agree that you should brown the chicken first. This will definitely be something that i try again

Peanut Butter Pumpkin Bread

This came out really good and i even made them healthier than the recipe called for. I cut the amount of sugar in half and used splenda, i used whole wheat flour and also substituted applesauce for oil. I made 1 pan of bread and used the rest of the batter to make muffins. I don't think i would make muffins again only because they didn't come out as moist as i would have liked (i am attributing that to my substitutions).

Autumn Glazed Pork Chops

This came out really good! So quick and easy to make. The pork chops were moist and really tasty, you could definitely taste the individual flavors of the orange, cranberry and apple cider. I had a very picky eater who tried pork chops for the first time and loved them! I will definitely make these again!

Mashed Sweet Potatoes

I love sweet potatoes because they are healthier for you than regular potatoes. I don't use the butter but i did add a little splenda brown sugar and they are plenty sweet enough!

I don't know what i did wrong but the batter just wouldn't mix for me. I don't know if it was the whole-wheat flour but it kept separating. I will try it one more time but any suggestions for making the batter better?

Strawberry Ricotta Stuffed Whole Grain French Toast

I have made this recipe twice now and it was great both times! The first time i used sweet bread, of course not as healthy, but it was great! I made it a little healthier by using egg whites and fat-free ricotta cheese and it still was very tasty!

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

The sweet potatoes and apples were good but the pork turned out kind of dry. It was only in the slow cooker for 5.5 hours. I added the white wine and thyme, as was suggested in previous posts and it was a good addition!

Cranberry and Apple Stuffed Pork Chops

This recipe was really good and so simple to make. The only adjustment i made was to use the glaze from the "apple cranberry stuffed pork chops". The glaze combines apple juice, corn starch and brown sugar. The glaze ensures that your pork chops wont be dry and adds a little more sweetness to the recipe. The only other thing i would add would be to adjust the baking time depending on the thickness of your pork chops. I only baked mine for 25 minutes vs. the 40 minutes it calls for in the recipe.
