Coconut Orange Cupcakes

These were very moist. I made half as the recipe directed and then made half with the addition of some Orange Blossom Water. This is available at Indian/Arabic stores. The ones with the Blossom water provided a much sweeter orange taste instead of a more bitter OJ taste. Definitely try the blossome water!!!

Artichoke Chicken

This is my new favorite way to make chicken. So easy! I marinated my own artichokes in EVOO, garlic, fresh dill, parsley, basil, salt, lemon juice and a little wine vinegar. I salted the chicken first then added the sauce (1/2 mayo 1/2 sour cream)over it. I then put some paprika and a little crushed red pepper and italian bread crumbs on top! Baked for 45 minutes!

Glazed Apple Cookies

400 degrees for 10 minutes left me with burned, back bottoms. This definetely needs more apple as well. Cook at 375 for 8 minutes.

Cream Cheese Pound Cake III

To all of those who are having a dry cake...I have made this a couple of times now and the first time I cooked it as directed (325 degrees) and got a crust that was too done in some places and an inside that was dry in some places and not done in others. I reduced the temperature to 300 and cooked it for 1 hr 35 minutes and it came out perfectly moist and the crust was just right! I also rotated the cake every 20-25 minutes. Oh I also added the eggs one at a time. Perfect!

Fried Chicken with Creamy Gravy

I really like the spice mixture, but the chicken ends up being way too oily in the end from spending so much time in the oil on a low temperature. Cook it at 365 for 6 min, then cover it and cook about 10 min...flip it and do the same 6 uncovered then 5-10 min uncovered. The gravy is really good!

Teriyaki Marinade

Yummy! This is really good. I was out of onion powder so had to substitute minced onions...still great! I didnt have time to marinate the complete time...maybe only an hour, so I just continued basting while it cooked in the oven until carmelized and browned.

Unbelievable Chicken

Yummy! I broiled the chicken 5 minutes on each side. I also set some of the marinade aside and poured a small amount over it once it was done. My DH kept saying how good it was :)

Spinach Quiche

This was sooo yummy! I made this at brunch for guests last week and it turned out great. I used a little less than half a stick of butter. I would also advise browning the crust for a few minutes to get the bottom done.

Simple Scones

I just made these without the food processor and it wasn't that bad, just a little butter on my hands. But otherwise great recipe...not dry like other scones I have tried.
