Marshmallow Crispie Bars

Not much new you can do to good old fashioned rice krispie treats but I did like the addition of vanilla. I think I used the whole 10oz. bag of regular size marshmallows & about 5 cups of krispies. This left them nice and gooey!

Mexican Rice III

This is great -- exactly what I was looking for to complement Mexican meal! We didn't have a jalepeno, fresh tomato or chix broth on had so I skipped the jalepeno, used a can of diced tomatoes with peppers in it and used more bouillon cubes and water. With all the subs., it was still great so I'm looking forward to trying it with fresh ingredients next time. Will definitely make this again!!

Lime Chicken Soft Tacos

Very tasty! I'm not a big oregano fan and wondered about that and then read a lot of the other reviews suggesting to sub. cilantro and/or cumin AFTER my chicken was sauteeing with the oregano. But...in the end, I was actually glad I stuck to the original recipe b/c we all really liked it with the oregano and didn't think it had an Italian flavor at all. I did end up using the juice of a whole lime and did add a little cumin for some certain Mexican flavor. With lettuce, tomatoes, cheese and spicy salsa...Mmmm Mmm!

Fruit Dip II

This is very yummy. I took some other reviewers' advice and added some orange juice and cool whip. Hmmm....I actually think I preferred the original recipe -- plain and simple. I doubled the batch so I'd have extra and used light cream cheese. I added 3T of OJ instead of 4T (suggestions were 2T per batch) and was I glad! The OJ definitely gives it a distinct citrus taste so if you're not looking for that, leave out the OJ. The cool whip isn't bad but makes it more whipped than creamy and I prefer the creamy now that I've tried it this way. It's still very good but sometimes you just don't mess with a good thing. I think I will try the strawberry cream cheese some time, though :)
