Eggplant Parmesan II
This was a big hit with all of the eggplant lovers in my family. Even I liked it, and I don't usually enjoy eggplant. The recipe is simple, and the dish is filling, and freezes well, so I usually freeze half of this recipe for another night's dinner.

Easy Chocolate Bundt Cake Glaze
I hate to put a damper on this recipe, but it didn't work for me. I followed it exactly and yet, the chocolate didn't melt perfectly smoothly, with tiny pieces of chocolate chips still discernable to a knowing palate. I did not begin mixing immediately upon adding the chips, and perhaps therein lies the folly. Since the chocolate didn't mix in well enough, the mixture was thin. I added more chocolate chips, but it still did not thicken adequately. It made a nice chocolate sauce, but definitely not a ganache.

Best White Icing Ever
Simple and easy to work with - spread beautifully over the cake and blended effortlessly with food coloring. This will be my new "go-to" basic icing recipe.
