Quick Quiche

Thought this was an excellent and easy quiche recipe. Its been years since I made a quiche so I can't remember of flour goes in the filling, but I didn't miss the crust at all because of the flour in it. The flour sunk to the bottom and formed its own crust. I also used whole wheat flour to make it a little healthier. I made ham, broccoli, cheddar, doubled the recipe and threw one in the freezer for later. Am definitely looking forward to eating this again at a later date.

Glazed Tofu Meatloaf

We loved this recipe! I'm not a big fan of meatloaf, but the hubby is so I'm always on the lookout for something a little different. This totally hit the spot. I took others suggestions and only used one egg and only 1.25 lb of ground turkey. As others have said, the sauce is really what makes it and I doubled it. Served it over brown rice and we were really impressed with the flavor! Picky hubby (who actually knew about the tofu!) and 2 yr old ate it up. This is a winner and I'm about to make a freezer meal out of it for later :)

Apple Butter Pork Loin

I thought this recipe was pretty good, as did our guests. Everyone says its like eating Christmas. I'm pregnant, so it may just be that my taste buds are off, but I felt it needed a little bit of something more. I'm rating this a month or so after I made it, so I couldn't say exactly what I thought it needed at the time! I did make a cornstarch slurry to thicken the sauce and poured that over some couscous. Again, guest loved it and hubby who doesn't like sweet with his savory, gobbled it up!

Portuguese Pork with Red Peppers

We loved this pork! Like others, I couldn't get over how tender it came out. I served it with pine nut couscous and it was an excellent and healthy meal. So simple, yet so delicious :)

Morning Glory Muffins I

Thought this recipe was excellent and a great way to get in veggies and whole wheat. The only changes I made was to use golden raisons and coconut extract because it was all I had on hand. It made way more than 18 muffins, closer to 25, I'd say. This was a nice bonus as my 2 yr old, hubby and I gobbled them down. Will definitely be making these again!

Easy Chicken Posole

Excellent! My husband loved this, tomatoes and all :) (And he hates tomatoes, so that's saying something). Will definitely be making this again. Cut the recipe down, but will have to make it bigger because we fought over the leftovers the next day because I hadn't made enough. Absolutely loved it!
