Excellent flavor and fell off the bones easily, but the meat could have been a little more tender. May have been because I only did one rack or maybe the quality of meat since I got them on sale.

I would have liked it a little cheesier and I even added some shredded colby jack in addition to the american slices. We had a huge onion, so I only added half and that was too much. Might be okay with a sweet onion. I'll cut back to half the onion next time. My husband loved it! And we both thought it sounded good with the mexican seasoning as other reviewers mentioned. Maybe we'll try it that way next time.

Delicious! I followed other reviewer's advice and added half of the soup base. I added twice the rice, but it made the soup a little thick. I'd stick with one cup next time. I also like the soup more lemony, so I add extra lemon juice to my bowl.
