Zucchini Bread IV
Totally delish!!! My daughter wouldn't taste it, but my three sons gobbled it up like no tomorrow! I replaced half the oil with applesauce, and it was still very moist. I also added streusel topping. Finally, I baked half in a loaf pan as directed, and half in 12 muffin cups. Fantastic!!! And for those who are hesitant because it's zucchini: it does not taste like zucchini at all.
