Stuffed Artichoke Hearts
I made these last night. Scaled the recipe down to one can of artichokes. As per another reviewer, I increased the filling ingredients to have enough. I forgot the lemon pepper, but added a dash of cayenne and it was great. The can I used had 12 chokes in it, hubby ate 8 of them himself! I did not coat the entire choke in butter, just dipped the bottoms in butter so it was less calories. I also used no fat cream cheese and sour cream. Delish!

Slow Cooker Carnitas
I usually make carnitas on the stove top, but the recipe looked good since it was in the slow cooker. I cooked it exactly as stated, the spices were very nice. However, the meat came out pasty and sorry, I did not like the texture of it. Hubby and kids thought it was only ok. I do not plan on using this method again.

Easy Turkey Tetrazzini
As per other reviewers, I added more liquid. I added another can of soup. Since I did not have cream of celery soup and since there were mushrooms, I used a total of 2 cans of cream of mushroom soup, 1/2 chopped onion saute'd with the mushrooms, 1 tablespoon of minced garlic and 1/2 cup of half and half. The kids and I loved it! Hubby does not like turkey, so next time, I will try this with leftover chicken. Definitely a stick to your ribs kinda meal. Will make this again!
