Monterey Chicken with Potatoes

The taste was wonderful, especially after adding salt, pepper, and a little chili powder. The times, however, are off. Using others' suggestions, I doubled the time for the potatoes before adding the chicken, and they still were not done. I ended up removing the chicken from the pan because it was becoming overdone, then letting the potatoes cook another 5 or 10 minutes. The only other change I made was sliced some green, red, and yellow bellpepper (I really like vegetables and wanted to add a little nutrition content) and added it to the pan at the same time as the chicken. I will have to try this again with time adjustments, and next time might roll it up in tortillas and eat it like a burrito

Vegetable Medley I

As written, this recipe is just ok. I used fresh tomatoes instead of canned. 30 minutes in the oven is definitely too long--after 20, I took it out and put it back in the pan for just a few minutes to add the parmesan. The taste was good, but it was far too mushy and watery. I thought it would be better over pasta, so I tried it again, using the same ingredients, only left it in the oven for about 12 minutes, again returned it to the pan to add parmesan and to reduce it a little. Then I tossed it with some bowtie pasta, and I thought it was definitely much better this way.

Lime Garlic Chicken

I didn't have lemon pepper, but I added a little cilantro. Also used only olive oil, no butter. It was still very, very good.

Herb and Chicken Pasta

I didn't have any chicken broth or white wine to make a sauce, so when I cooked the chicken I put in a little butter, then added more olive oil when I cooked the onions and garlic. It worked great. A little parsley and parmesan on top, and it was delicious

Fried Rice Restaurant Style

As a college student new to apartment life and low on cash, this recipe is ideal. Quick and easy, and you can really substitute whatever vegetables you have/like. I omitted the peas, boiled some broccoli with the carrots, and added two cloves of garlic, a chopped onion, and some chopped green onions right after the egg. Turned out great, even though I didn't have sesame oil

Lynchburg Lemonade

a great drink, but I highly suggest SHAKING instead of stirring. it tastes so much better because the ingredients are more thoroughly mixed than if stirred. also adds to the overall "lemonade" effect

Mushroom Spinach Omelet

Best omelette I've ever made. I don't care for mushrooms, however, so I left those out but added some diced fresh tomatoes. I also sprinkled the cheddar over the fillings toward the end instead of adding it to the egg mixture.
