Quick Creamy Spinach and Tomato Pasta
This is quick and easy! When ever I see "bland" comments I go right to the garlic. I pressed 2 large garlic cloves(could have done 3. but I like garlic a lot) into aprox 2 tbls of olive oil with salt and Italian seasoning mixed in a jar. Then I strained the oil out into frying pan and sautade half an onion. I put the left over garlic in with the spinach (I do this so I dont over cook the garlic yet the oil still gives the onions a great taste. I could almost eat them plain like this.) to wait for mixing with tomatoes and onions when the onions are done. Other then doubling the pesto I followed the rest of directions and it turned out wonderful! Next time to make it more saucy I may almost double the tomatoe and sour cream and triple the pesto and add more garlic onion salt and Italian seasoning.

Shrimp Scampi V
Great! Bland??? Not mine. It was full of tast. I did follow a lot of the recomendations of others. The only thing I did that I didn't see mentioned was I sotaid (saw t aid) some diced onions in the lemon butter/olive oil before I added the garlic shrimp. Next time I'll make my own shrimp stalk instead of using any chicken even though I didnt use much stalk anyway because I like the wine. This can be tweeked in all sorts of ways to suit your fancy which I always think is good. 5 stars!

Vegetarian Burrito Casserole
My family and I definetly dug this one! Great tast great texture.It seems easily twikable to personal preferance which I like. The meat lovers didn't know they wern't eating meat either. I think next time ill add a some corn and a little diced purple onion. I also think sour cream and cottage cheese would be a delicious addition to make it more of a mexican lasagna.
