Cantaloupe Bread with Praline Glaze
I made these as mini muffins, cooking them at 350 degrees for 22 minutes. I added the nuts into the batter, also replacing the oil with another cup of cantaloupe. A good use of an abundant crop.

Eggplant Parmesan II
Excellent. I followed the suggestions of others regarding sweating the eggplant and then baking it at 400 degrees for 7 minutes per side. Even my 2 year old loved it!

Beer Batter
Definietly roll items in flour before dipping. We fried cauliflower and pickles. Tasted good (better the next day as the garlic got stronger), however there was something missing from the overall flavor. Maybe salt?
