Curried Coconut Chicken
This was absolutely delicious! I used 1/2 a large shallot instead of an onion (didn't have one) and I used a little more oil in the beginning cause the curry oil became too thick. All in all it was soooo good and it made enough leftovers for 5 days! Win! :) Also, the only thing I had to do different was mix a little cornstarch and water and add that to the sauce to thicken it a little. I can't wait to make this again.
