Enchiladas Suisas
I made these a week ago. I grilled seasoned chicken breast on George Foreman grill. Allowed to cool then cut in thin strips. Used aneheim chili's from last summer garden (frozen/thawed). Subbed half/half for heavy cream b/c that what I had on hand. I added the half and half to the salsa verde. Also used garlic jack cheese for the cheese listed. Served with sliced green olives on the side. I skipped the frying in oil and dipping in sauce part. Put a little sauce in pan. Rolled enchiladas placing in sauce causing the enchiladas to crack. This was a good recipe all in all. It lacked spice but that could be added. Will make again.
