Potato and Cheese Frittata

Use more oil than specified. The potatoes stick to EVERYTHING if you don't. If the pan hadn't been salvageable I'd have taken another star. Beyond that, not bad. Not bad at all. I plan to make it again, but slight differences: 1) I'm going to fry some bacon in the pan first, use that oil, and crumble the bacon on top before I put the egg on. 2) I'm going to add some peppers, maybe even a bit of cilantro.

Chili-Lime Chicken Kabobs

Excellent marinade. As I made it, "cayenne pepper to taste" was about 1/4 teaspoon. After marinating it for about three hours, I threw some mushrooms in to soak in the sauce for 15 minutes or so. Also on the skewer were Vidalia onions (lots of these) and cherry tomatoes. There would have been green peppers, but I was rushing and forgot. All grilled together on the BBQ. Best Chicken Kabob I've ever had.

Best Steak Marinade in Existence

I'm not sure about "Best In Existence" - I'll get back to you when I've tried all the others. This one, however, is sure to rank high for any competition that factors in cost, simplicity, availability of ingredients in an average kitchen and the flavor of the ultimate result. It didn't overpower the steak's flavor, but complimented it. On the grill, it charred a little around the outside of a thin vein of fat - keeping the flavor in. Once on the grill, I poured the remaining marinade on top and let it soak into the meat as it cooked. I'll certainly be using this one again.

Ladolemono - Lemon Oil Sauce for Fish or Chicken

The meal I planned around chicken grilled with this sauce turned out to be far more flavorful than the chicken. There was nothing wrong with the chicken, but it wasn't all that great either. "...usually served with the meal so that everyone can put as much ladolemono on their fish or chicken as they want." Cooking with it was one thing. I don't recommend putting it on the chicken after it was cooked as suggested.

Heavenly Chocolate Mousse

Quick and easy mousse. Very tasty. A bit rich (as if that's a downside with chocolate mousse), it's also slightly thicker than I was looking for. Two suggestions I'd make: 1) Whip a little more cream than the suggested measure. 2) Save a little bit of crumbled chocolate. Fold some into the mousse after the cream to provide a little texture, then sprinkle a little on whatever whipped cream you top it with for taste and presentation.

Best Hamburger Ever

Meatloaf? It tastes like meatloaf, you say? Hardly surprising as it shares so many of the same ingredients as a good meatloaf. I thought they were great. Even the cooking time - five minutes on each side until they are well done - worked out for me as I used decidedly NOT lean beef. No, I don't usually go for a well-done burger. Even my wife, who doesn't like burgers at all and doesn't like her meat done well, loved these. This one is a keeper at our house.

Hunter Style Chicken

We didn't have any bacon on hand, so I did without. No fresh basil, but we had dried. We didn't have a whole chicken, so I used chicken breasts cut into strips. I did have 8 oz fresh baby bella mushrooms on hand. They were perfect for this. It was quite a hit.

Herbed Twice-Baked Potatoes

I started with five *large* baked potatoes before I noticed that this recipe gives you two servings per medium potato. With four adults and one kid eating, there were very few leftovers anyway. Easy to make too.

Simple Scones

I can't seem to get this recipe quite right. The scones come out all right, but not perfect. My wife, on the other hand, knocks it out of the park every time. Pretty much confirms to me that it's my inept over-handling of the dough before cooking it. Edit: Nailed it this morning. Till now my butter hadn't been cold enough starting out.
