Butternut Squash Enchiladas

My fiance thought these were amazing. I used 6 larger tortillas, 8 oz of sun dried tomatoes (wasn't sure how this compared to the 4 called for as I could only find them in weight), subbed parmesan for cotija cheese & used green enchilada sauce. I took other's advice and baked the squash first (45 min at 375 cut in half face down). My only change would be to use a bit less tomatoes (4-6 oz) and more goat cheese. Very different and a great way to use squash!

Curried Butternut Squash and Pear Soup

I followed the directions as written with the exception of adding skim milk instead of half & half. It was good, but I will continue to look elsewhere for that "over-the-top" butternut squash soup recipe.

Little Mickey's Favorite Cheesecake

The cinnamon was out of place in this cheesecake and distracted me from the peanut butter. Others liked it, but no one raved or asked for the recipe. I used less butter (1/2 cup) and used crushed reese's pb cups in place of 1 cup of chocolate chips. I would look elsewhere the next time I wanted to make a cheesecake just to find that "perfect" flavor.

Squash-Apple Bake

I had a large squash, so I made with 3 apples and made 1.5x the sauce and placed in a 9x13 dish (apples & squash cubed). Cooked under foil for 50 min & removed foil and baked for 10 more minutes, turning oven up to 400 (only because the other dish in the oven said to do so). It was good and everyone said it was good, but it wasn't "wow." The other dish I served, everyone was requesting the recipe, but not this one. I think it's a nice fall/winter dish that's on the healthier side if you're looking for a change of pace, as I was. This fit the bill, but I would search for something new next time.

Easy Pleasy Mac N Cheesy - US Navy Style

A very yummy dish that will please children! I enjoyed, but as an adult would spice it up with mustard or cayenne for that extra kick if serving for adults. I used 2% Velveeta, fat-free sour cream, omitted the parmesan cheese and used crushed corn flakes, as I had on hand. I would make this again for that creamy delicious perfectly velvety dish!

Parsley Red Potatoes

Delicious "starter" recipe. I added rosemary and these were delicious and went great with the grilled pork loin we served. I did cook all ingredients in a slow cooker on low for 4 hours and then drained. I had to travel so I reheated in the microwave to warm through.

Banana Cake VI

Simply delicious cake! My only changes were to cut in half and bake in an 8x8 pan, make my own buttermilk with milk & vinegar, use egg whites only, substitute about half the sugar with splenda, and I used 2 full bananas. The frosting recipe provides a THICK layer of frosting if you use it all!

White Chocolate Snack Mix

This is ADDICTIVE!! One of my FAVORITES!! A friend made this and I wanted to ask her for the recipe, but didn't because I know I can't keep myself away from it. I came across it on here though and made it with peanut M&Ms - DELICIOUS!!

Chocolate Fudge Buttercream Frosting

Wow - delicious! The hot fudge flavor came through and was scrumptious! I paired with an almond cake and this overwhelmed the flavor and came off as more of a white cake w/ chocolate frosting. I wouldn't pair with the almond again, but would use on a white/yellow cake!

Marshmallow Fondant

"Sticky" would be the understatement of the year! We finally got it to work using cornstarch and working with it for short time periods (putting it back in the freezer between bouts). I was very impressed by the taste as I actually enjoyed it unlike professional cake fondant. I would be curious to try other flavors of extract to match the cake flavor.

White Almond Wedding Cake

Awesome flavor! I doubled the recipe to make a 10" square and 8" square layered cake. Used fat-free sour cream and half Splenda for the sugar. This held up wonderfully when cutting into layers. I baked the cakes together and removed the 8" at 55 minutes and continued baking the 10" for a total 70 minutes. The 8" was perfect, the 10" was slightly over baked. Since this was a practice run for a wedding cake, I tried three different fillings from this site: Chocolate Fudge Buttercream Frosting (super, but so overwhelming that the almond flavor didn't come through), Special Buttercream Frosting (using Almond extract), and one made of raspberries. All tasty, but enjoyed raspberry best and I am always a chocolate/caramel girl before fruit flavors any day! The crowd had pretty even reviews and all were enjoyed. We covered the cakes with the Marshmallow Fondant recipe on this site and once we got the hang of it, it went well!

Irish Cream Chocolate Cheesecake

The family raved about this when I made it for a picnic. Personally I would have given it 4 stars as the irish cream taste wore off after a couple bites, but the response from everyone made me rank a 5. I used crushed oreos in the crust & low fat cream cheese - otherwise I followed everything. I put water under the cheesecake in the oven and left it in overnight after I turned the oven off just before bed - NO CRACKS!

Pesto Turkey Burgers

These were tasty burgers, but I would likely try another recipe before sticking with this one. It was a nice variation. I left out bread crumbs & seasoned salt and used beef on the grill.

Michelle's Coconut Chicken Curry

This was a great 'base' recipe that I added on. Additionally, I added in 1 regular sized sweet potato cubed & baked in oven for 30 minutes prior, used only 3/4 C coconut milk, 1 container single serving plain yogurt, 10 oz Shrimp instead of chicken, 1 mango, cubed, cauliflower, 3T tomato paste, small piece ginger root grated, 1 red pepper chopped, 1/8 tsp cayenne pepper. I omitted the onion, chicken stock & garlic salt. A delicious sweet curry!

Mango Chicken Curry

I used this as a base recipe and added add'l veggies and it was yummy! I added 1 regular sized sweet potato cubed & baked in oven for 30 minutes prior, 10 oz Shrimp peeled instead of the chicken and cauliflower, Additional changes were using 3T tomato paste, 1 container single serving plain yogurt, 2 cloves garlic minced, 2 1/2 T curry powder, and omitting the onion. YUM!

Lemon Yogurt Pound Cake with Lemon Glaze

Tasty cake, but mine turned out very short & dense. I guess I should have figured given it's a pound cake, but I was hoping for fluffy. I subbed 1/2 C butter and 1/2 C applesauce for Crisco. I added 1 tsp of lemon extract and used 12 oz yogurt, rather than 8. I continued to coat the cake with glaze for hours to ensure it soaked in. Tasty, but I'd probably look to try another recipe next time.

Exquisite Pizza Sauce

This was a good pizza sauce, but nothing wowed me about it. I was hoping to replicate the sauce of my favorite pizza place that has a sweetness to it. I omitted marjoram & anchovy paste since I did not have. I would make this again, although I'd be more likely just to buy a store bottle already made.

Blue Cheese Burgers

Oh YUM! I divided recipe in 4 to make 2 burgers with a total of 3/4 lbs turkey. I omitted chives & black pepper and these were delicious! We enjoyed with a slice of "farmer's cheese." These were very cheesy by far and not even in a "blue cheese" sort of way. I will be making these again!!
