This was a great 'base' recipe that I added on. Additionally, I added in 1 regular sized sweet potato cubed & baked in oven for 30 minutes prior, used only 3/4 C coconut milk, 1 container single serving plain yogurt, 10 oz Shrimp instead of chicken, 1 mango, cubed, cauliflower, 3T tomato paste, small piece ginger root grated,
1 red pepper chopped, 1/8 tsp cayenne pepper. I omitted the onion, chicken stock & garlic salt. A delicious sweet curry!
