The best recipe I've tried for a 'plain' roast chicken that just capitalizes on its own chickeny goodness! Sure, there are some great roast chicken recipes out there that include lemons or garlic or other strong flavors, but this just makes the most of the chicken as it is. The most moist and tender chicken I've cooked to date, and the husband went back for seconds - a rare event! This will be a keeper.

I did this as per the recipe but used vegetable oil rather than canola because that's what I had, and the lemon and dill flavors were subtle but still there. Some reviewers increased the lemon, but I think I like the subtlety of this recipe as it is. Very nice, and approved by the husband!
