Fresh Asparagus Risotto
First try at Risotto and it ended great. Second try and deviated from this recipe and it ended uncooked after the 5th cup of liquid and ended up nasty. Maybe because I didnt use cream and I tried the italian style of putting cold butter at the end which made it worse?? Stick to this recipe, the whipping cream is key, it will make your risotto more favorable and rich and creamy. Butter instead of oil is another thing I didnt do the second time and oil is not good enough. Butter gives it a richer taste. All in all I will make my risotto just like this recipe except I will add other veg's and seafood.

Soft Oatmeal Cookies
I never made cookies in my life, but I love Oatmeal Raisin cookies, actually I like any cookie. But Oatmeal is my favorite, and I followed this recipe to a tee other than the chill for a hour part. Here is a tip for rookies in baking cookies like these, you will know when your cookies are ready when the edge of the cookie is brown. Dont worry that the cookie doesnt look all brown as when it cools it congeals and hardens. Dont touch it. These cookies are awesome and taste better than any oatmeal cookie I have eaten from grocery stores. BTW add raisins, I put a cup but I think a Cup and a Half would have been better. I like raisins!!, but a Cup of raisins will be enough. GREAT RECIPE!!!

Cajun Chicken and Sausage Gumbo
After making the worst piece of food and wasting a good 30 bucks on Food Network recipe of Chicken Caccitore, I had to rebound in a big way for my family. And this recipe has done it. I am telling you this is real easy to make and fun to make, the roux will be a good exercise on your wrists and arms. It also helps to have a $250.00 pot aka my moms stainless steel Caphalon Pot. The roux was a breeze with that pot and a wooden spoon. I had some ingrediants on hand and the rest were easy to find. The smell of the dish is great, the taste is awesome. I made my super spicy, when I think of gumbo I think of spicy, and the ol socom 1 saying from a character on that game, "I'm spicer than my ol' ma's gumbo!" This gumbo is thick, so no need for okra, which btw tastes like , or lack their of. Its awesome, and alot better than that canned stuff you get from campbells. I will make this over and over again, and will make this for my big family on xmas, im sure this will be a hit.
