Fluffy Pudding Frosting
This icing is delicious. You will be tempted to eat it without cake. It is also truly easy. I put it in an icing bag and piped it, for beautiful professional looking cupcakes. I wish I had thought to take a picture. They looked like the cupcakes you'd buy in a store, and it was unbelievably easy. Everyone loved them, even people who usually skip the icing. I would have liked to bump off half a point though. My beautiful swirls lost some of their intergrity, pudding certainly tastes better than crisco, but it will not hold up as well. When the cupcake were served the icing had begun to sag, just a little. (Really, less than you are picturing. I only mention it in the interest of full disclosure. What do you expect from a mix of pudding and whipped cream?)

Too Much Chocolate Cake
My husband loved this cake on Fathers' day. It was very easy. I only had one (small) package of pudding though, so I substituted the dream whip that I have been wondering what to do with. The batter was thick enough to hold the normal sized chocolate chips, no need to buy the tinies. The cake was delicious and moist with chocolate chips in every bite, everyone loved it.

Cream Puffs
I have made these three times now, following the directions as written. Once plated, it takes about two minutes until they are gone. A chef friend, who disdains short-cut cooking, loved these. I refused to give the recipe- he will never guess the filling was instant pudding! Lol! These are easy and really delicious. Your friends will think you actually worked on them.
