Chocolate Muffins

Wow. I used one reviewer's advice and replaced 1/4 cup of the flour with 1/4 cup of cocoa powder. I had no sour cream so I used plain yogurt as a substitute and 1/2 a bag of Andes creme de menth baking chips instead of semi-sweet (it was already open). Amazing.

Bacon-Roasted Chicken with Potatoes

Swiss Chicken Casserole II

We are getting ready to have our second child so I've been looking for recipes to either freeze or have easy ingredients on hand. This is a definite keeper! My picky husband described it as "Delicious!" and I can very easily send him to the store to get ingredients without worrying that he won't be able to find them. Before adding the soup I sprinkled the chicken with garlic salt, onion powder, and black pepper. (Note: after cooking completely, I did spoon the hot soup/cheese mixture over the stuffing and re-covered it with foil for a few mintues to soften it. Otherwise it would have been unpleasantly crunchy/chewy.)

Spicy Oven Fried Chicken

I don't like spicey, but this worked because even the amount of spice called for was not even too much for me. I made it when I was pregnant and really wanting fried chicken and this sufficed though it wasn't anything too special.

Cake Balls

Wow. I made these for a school fundraiser and got rave reviews. It's a work-intensive process that took me a LONG time, but once I got the hang of it (I made 3 batches) it was, as they say, a piece of cake. 1) I used half the can of frosting 2) I froze the pre-dipped balls overnight 3) I will not use almond bark again. I think the moisture in the cake balls made it clumpy and lumpy and pretty ugly. Flavor combos: 1) strawberry w/white frosting, dark chocolate coating w/ white chocolate drizzle 2) red velvet cake w/cream cheese frosting and vanilla almond bark coating. Tasted great but looked awful 3) Fudge cake w/Andes mints baking pieces mixed into batter w/ chocolate frosting, melted Andes baking pieces and dark chocoalte drizzle. All taste phenomenal. These are not an everyday project for me, but for special occasions I can see them becoming highly requested.

Buttery Soft Pretzels

These really tasted amazing. We live 45 minutes from a pretzel place, I'm pregnant and on a baking spree--I can see these becoming a "gotta have." I used only 4 cups of flour and a much cooler oven (slightly over 400) for a few extra minutes. I also only had regular table salt so I used that and with melted butter it was spectacular (though I usually wipe the coarse salt off of my soft pretzels). I did have trouble getting the dough to roll thin enough, but I think next time I'll just make a few long, thick "snakes" and try making big pretzel sticks. I'm thinking Superbowl party. Oh yum.

Best Bread Machine Bread

I love using my bread machine but am not always a fan of the dense bread it makes. I LOVED this crispy, light texture for a change of pace. Especially fresh and warm, my favorite white bread recipe.

So easy with the bread machine and all of the positive reviews did not disappoint. These are amazing. I use a cream cheese frosting for these and they get rave reviews every time.

Teriyaki Sauce

Wanted to make a steak recipe that called for teriyaki sauce so I found this. I used 2 T apple cider vinegar (because it's what I had) and 2 T chicken bouillon instead of wine. Very tasty. New go-to recipe.

Bread Machine Bagels

Yum! I've always wanted to try making bagels but it always seemed so intimidating. It's a very involved process, but I am in love with my bread machine because it makes recipes like these so easy! They really impressed my friends.

Miracle Baking Powder Pie Crust

Loved this! For years I have used the same recipe for pie crust, and for years every time I've made a pie I would get so frustrated with the crust that I swore I would never make it again. I though pie crust was just supposed to be difficult to make--then I found this gem. Made a double batch in the food processor for potpies and chocolate pudding pies and I will never go back! So easy to work with! Perfect tender, flaky texture, amazing taste, I love it!
