Two Ingredient Pumpkin Cake
I have used this exact recipe to make pumpkin whoopie pies. It makes a tasty, cakey cookie without the eggs that seem to be necessary for a good cake...for those who want to try that. Just add cream filling.

Saffron Rice
Fabulous recipe. 2 T olive oil is plenty. One time I sprinkled in some fennel, mustard, and caraway seeds since I didn't have any cardamom, and didn't really notice a difference - the cinnamon and cloves are the strongest flavors. Also added a tsp. turmeric when I stirred in the rice.

Bermuda Spinach Salad
I used what I had on hand for the dressing - green onions and jalapeno-cilantro dipping oil - which gave the dressing some extra kick.
