Tortellini Pesto Salad
Happy Home Ec Teacher
About this Cook
I am a Family and Consumer Science teacher (that's Home Ec for the folks who aren't aware we've changed our name.) I have been teaching for over 19 years, absolutely LOVE what I do every day, especially if it's a food demonstration. My students always tell me I need to start my own cooking show...Anyone looking for a new celebrity chef?...LOL.
My favorite things to cook
Always creating new stir fry combinations or casserole at home for dinner. Trouble is, I never write it down so any time I repeat a dish...it isn't quite the same but often times better...AND I love making cookies too. Always experimenting with the buttery goodness of crispy edges with a slightly chewy center...
My favorite family cooking traditions
I grew up with many Polish dishes over the holidays. Pierogis filled with cheese or sauerkraut or blueberries...we couldn't get enough since we only got them twice a year during Christmas or New Year's.
My cooking triumphs
Try planning and cooking a whole Thanksgiving dinner with a class of 25 high school students in three days. All with full tummies and cleaned up and still not late to class. Note: I only did that ONCE! That was enough!!! Phew....
My cooking tragedies
Cooking tragedies are always due to my inattention or being distracted (if something burns). My worst habit is being a know-it-all when making a recipe and will go on ahead with the preparation without keeping up with the reading of the recipe. I will get further and wonder 'now where does this go?' and find the ingredient should have been added early on...GRRRRR. That is what a know-it-all cook gets!!!

Black Bean Brownies
Don't tell the kids that there are black bean in their brownies until AFTER they eat them and are raving how delicious they were. I did this for some of my students....they were STUNNED!!

Microwave Peanut Brittle
Good recipe BUT....Nothing on this recipe indicated the wattage of the microwave. This recipe cannot be cooked for 12 minutes on a newer high watt microwave after the total 16 minutes the mixture exploded out the bowl with the addition of the baking soda. The peanuts were already 'burnt smelling' when it came to 6 minutes on the timer. It tasted like marshmallows blackened over a campfire. I threw it all in the trash, and started over. I cooked it for only 6 min, THEN added the peanuts with the butter and vanilla. Cooked it for another 4 minutes....tested it with the old water trick then added the baking soda...Much Better....BUT....not nearly enough peanuts. I would put in like 2 cups for the amount of the candy mixture it makes.

Black Halloween Punch
Instead of using water for the hand, make either red or green based Kool Aid and fill the glove. This way your hand is spooky colored rather than clear.
