Grilled Potatoes and Onion
This is a delicious, easy to prepare side dish. I made some minor changes: added several cloves of minced garlic, subsituted extra virgin olive oil for butter, added chopped thyme and left out the salt. I also added a sweet potato since it was in the fridge and needed to be used. I mixed all the ingredients in a dish to make sure the potatoes were well coated with oil and seasoning. It would probably taste really good with minced fresh rosemary. I opted for the thyme because my 1 year old prefers the taste.Yummy! I made enough for leftovers and am eating it now.
