Italian Sausage Soup

So great -but I used suggestions from others. First I used turkey italian sausage to reduce fat, used 2 cloves of garlic and added a small chopped onion, used cannellini beans instead of great northern, and used potato cut into small chunks instead of the zucchini, used Ox's no-sodium beef broth packets & omitted the salt and it was still salty enough. Last time I made it I threw in a handful of tiny pasta but it really doesn't need it -this is a filling soup full of vitamins. The fresh spinach added at the end really makes it!

Blue Cheese Burgers

If you make two thin hamburger patties and put them together, better used 1/2 the blue cheese as it doesn't melt and run out like it would otherwise. Very strong flavor.

Lasagna Alfredo Roll Ups

Use fresh spinach if you can (saute in a little oil or butter until dry/squeeze out water). This recipe makes a lot of food. It was pretty good but seemed to be missing something. Maybe some roasted red pepper alfredo sauce?

Pepperidge Farm® Chicken Florentine Wrapped in Pastry

I'm sure this is delicious but--buy the Pepperidge Farm puff pastry circle things. Thaw and roll those out, put the chicken in the middle and pinch together -very easy! The pastry sheets were difficult to say the least -what a mess. I just happen to have some of the circle puff pastry and they were so much easier. Also, after all of the problem with the pastry sheets (too dry, cracked, no cutting board that big! -probably most of the problems were my fault) and after all the effort, the frozen spinach tasted just like that -frozen spinach. My boyfriend liked everything but the spinach. If I was going to go through all the steps to make this delicious chicken -I would never, ever use frozen spinach. Maybe saute/drain/squeeze out water of fresh spinach until dry instead?

Strawberry Romaine Salad I

Delicious! My boyfriend asks me to make this over and over again. To save money I just used baby greens instead of the spinach and romaine. Also, I didn't have the vinegar so I used Marsala cooking wine. Slice the onions paper thin. Next time I hope to use light mayo. Didn't change ingredient quantities - everything was perfect. Look for store brand poppy seeds compared to the fancy ones to save money.
