Spicy Indian Chicken and Mango Curry
I could not find curry paste at my local grocery store. I used regular curry which was not powerful enough. It left it needing a stronger flavor. It was pretty good otherwise.

Healthy Potato Salad
I guess I was looking for more flavor. It was ok, but at least it is better for me then the real thing!

Taco Pie
My teenage boys loved it. I think it was a bit salty. I think it may have been the brand of taco seasoning I used combined with the salt from the tortilla chips. I think I would use taco shells on the top next time. This recipe is a keeper! Very fast to put together.
