About this Cook
First and most importantly, I'm a mom. They're almost grown up now, but they're my reason for being. I love having their friends over for meals and cookouts, and I try to keep a steady supply of baked goodies on hand for everyone. I'm always trying to feed everyone, the more the merrier.
My favorite things to cook
Sweet with savory is my favorite taste experience, so I like to do fruit salsas and relishes with heavily spiced meats or grains. Current favorite things include jerk seasoning, salsa verde, and fresh guacamole, not all together, of course!
My favorite family cooking traditions
Every holiday sees the traditional foods, no matter if we're having company or if it's just me and the kids. I continue my mom's traditions of making turkey croquettes after Thanksgiving, ham pot pie after Easter, etc. It's comforting. Another tradition is Christmas cookies; I always make tons, some new and some staples like spritz, butterballs, and thumbprints.
My cooking triumphs
Silly little things make me happy, like finally creating an exact mimicry of this fabulous sweet cornbread I once had at a Dayton restaurant, the first time I made rosti potatoes like I had enjoyed in New Glarus Wisconsin, oooooh, and blintzes, which I discovered 20 years ago in Vegas.

I had a kitchen fire in 2000 due to leaving the stove unattended...

Pumpkin Cream Cheese Muffins
Oh my goodness; I am in muffin heaven. These are fabulous. After reading a bunch of the comments, I did add some additional spices to the batter, just eyeballed in some cloves, allspice and a tiny bit of ginger. I use Pampered Chef scoops, so I used the medium sized one to put the batter in the cup. Then I used the small one to put in the cream cheese filling, and another medium sized scoop of batter on top of that. It baked up fine, with the filling right in the middle. For the streusel topping, I used half white and half brown sugar. They baked perfectly in exactly 20 minutes, and it made 21 muffins for me. My daughter and I can't keep our hands off them! This recipe is a keeper.

Creamy Chicken and Rice
Simple to make. I didn't have a lot of cheese on hand so I also added a can of cream of mushroom soup, just to be sure it had enough flavor. It was very creamy and rib-sticking and the family liked it.

Apple Cake I
This was very good and so simple to prepare. After reading all the reviews, I did substitute 3/4 c. melted margarine for the oil, and used brown sugar in place of half of the white sugar. I also spiced it up just a bit, with a pinch of nutmeg and cloves. My apples were Red Romes, and they did very well in this. I made a glaze of powdered sugar, milk and vanilla, and just drizzled a criss-cross pattern over the top. I will definitely make this again. Update, next day-omigosh, this is even better! It seems even moister and the flavors have blended beautifully.
