Easy Lemon Cookies

I made these twice yesterday. The first batch I used a Betty Crocker Lemon cake mix and they were wonderful! But they didn't make very many cookies so I decided to make another batch. The second batch I couldn't find Betty Crocker and got a Duncan Hines and they were awful! The Duncan Hines batch was flat and ugly. Still tasted ok but not near the fluffy, soft , melt-in-your-mouth texture of the Betty Crocker batch. I took someone's advice and chilled the dough on both batches and this is a very good tip. I also added about a T of lemon juice to both. So double the recipe but get the Betty Crocker Mix and you'll be very pleased!

My Amish Friend's Caramel Corn

Everyone just loves this. Very addicting. I took others advice and used butter and some extra vanilla. I've made 4 batches so far and more to come!

Super-Delicious Zuppa Toscana

This was WONDERFUL. I tweaked it just a tiny bit. Instead of the 4 slices of bacon I used a couple tablespoons of the pre cooked bacon pieces and threw them into the sausage when it was nearly browned. Got the flavor without the fat. And instead of the cream I used a can of low fat evaporated milk mixed with a couple tablespoons of cornstarch. That gives you a little more feel of the cream without the fat also. And I used kale instead of spinach. Loved it! and so did hubby. I'll be begged to make this again and again.

Jalapeno Popper Spread

Will be doing this over and over. Great party dip. Everyone raved!. I baked it rather than microwave and put the breadcrumbs and parmesan on top and some shredded cheddar inside. Used tortilla chips too!

Cajun Chicken

Wow! This was very flavorful and juicy. I used the olive oil and used less of it by 1/3 but kept the spices the same. Still had plenty of volume for immersing the chicken. This will be made often at my house. Thanks so much for an alternative to the same old Italian dressing marinaded chicken.

Simple Garlic and Basil Pesto

Very good pesto. I did cut the olive oil by 1/4 and just used pine nuts. Made 3 batches to share and freeze. Will enjoy this winter when my basil is all gone! Thanks

Cucumber and Tomato Salad

This was very good. Very refreshing and just tastes like summer with home grown veggies and basil. I used the feta and red onion and a red wine vinegar dressing. Am anxious to try the Absolutely Fabulous Greek House dressing on it. I think that will be fabulous!

Red Skinned Potato Salad

I thought it was good but not wonderful. I used half mayo/half sour cream and thought there was too much dressing for my taste. I did like the bacon and red onion. I think I'll try again with less dressing.

Bodacious Broccoli Salad

Spicy Grilled Shrimp

Really enjoyed this. Something different to do with shrimp. I'll be doing this again. I let them marinate for about 15 minutes and made no other changes. Very good!

Asparagus Wrapped in Crisp Prosciutto

These were super yummy. I tossed the aparagus in the evoo and garlic powder then I wrapped 4-5 spears in each slice of prosciutto, as "serving buddles". Mostly, because I didn't have enough to do each spear and was making as a side rather than an appetizer, but it worked really well. Still had a very nice flavor without getting too salty. New favorite asparagus recipe! Thanks
