I am single working mother of three girls. My daughters are 10,5&4, and I take care of my mentally challenged uncle. I am also going to college. I am very busy so that doesn't leave me much time to cook. I am always looking for good, cheap, quick, kid friendly, healthy receipes! IT's a challange!! : ) I always want to cook things that my girls are gonna like. If they like it, I cook it. We really don't have family cooking traditions. Chicken cordon bleu. I have always wanted to cook it, and finally decided to go for it. My oldest daught loved it! She wants me to cook it all the time, but I rarely have time for it. My best friend and I were working on an assignment at my house. I offered to make her an omelete...pretty easy. I was very proud of myself cause it looked really good. When my friend tasted it she said that it was good, but was a little sweet. She wanted to know what I had put into it. I showed her the ingredients: eggs, little milk, bacon, coconut! I had accidently gotten the coconut instead of the cheese!! Til this day she still says it was good!!
