Romanian Apple Cake
Wow - just like I'd get when I visited the DDR as a child. Loved it! The baked cake is light and just lightly flavored with cinnamon. The apples are soft and moist and the walnuts give just a bit more texture. My husband, his co-workers, and I just ate it all up quickly! I'm heading to the store for some more apples today to have one for home! I used all Granny Smith and added about 1/2 c of raisins. Rustic and flavorful! Yummy!

Quick & Easy Ricotta Pie
Fantastic and easy! Just don't care for the piecrust part of it. The filling is great and easy - light and cheesecakey! I'll do this one again - I'm sure it's great on it's own w/out a crust - but I'm getting talked into a pecan/graham cracker crust for next time.

Filipino Lumpia
Loved this one. Used grated carrots and chopped the green onions a little chunkier for our taste - it was great! Will try to bake it at the 425 like someone mentioned to lighten it up a bit - but it had a great taste. Used eggroll wrappers and got 32 big lumpia out of it with enough filling left over to make some killer fried rice to go with it! Thanks for sharing - I'm making it again soon!
