Zucchini Patties
I thought the taste of these patties are heavenly. Good as left overs also. My husband is not a zucchini lover but he did eat a few of them, with no complaints. Just a nice change from the regular zucchini recipes.

7-Layer Meatless Tortilla Pie
I fixed this dish here at home and we loved it. Also, I was visiting with my daughter and her family, fixed this and her husband was crazy over it. She fixed it again yesterday. This is a keeper, easy and fairly healthy too.

Whole Grain Waffles
Excellent waffles. Loved all the healthy ingredients in them. We just have applesauce on ours.
