Italian Chicken Skillet

I was pleasantly surprised by this recipe--and I love that it only uses one pan!!! I added some water (about 1 cup) since it seemed a little dry and I cooked it with the lid on. I added salt, pepper, oregano, more garlic and a lot of fresh basil. I WILL make this again-- with sausage, onion, green peppers and mushrooms. Thanks for sharing!!

Raspberry Oatmeal Bars

I loved how quick this was to put together and bake. I like that it bakes in a 13x9 pan, too (an 8x8 pan is never enough). Will make it again and again.

Layered Chicken and Black Bean Enchilada Casserole

Very good. I served it with lettuce, green peppers, red onions, black olives and sour cream. I omitted the sour cream from the recipe so I could put it on top. I would have sprinkled more cilantro on top if I had any. I used flour tortillas rather than corn. I like the idea of topping it with avocado!! I will try that the next time I make it.

Red, White and Blue Slaw Salad

Good salad. It's fun to read the reviews. I thought there was too much dressing and that it needed a bit of salt...just personal preference. If I make it again, I would add the dressing just til it covers the cabbage and include some other veggies to it (like broccoli, green peppers or green onions. I guess it would be Red, White, Blue and Green Slaw, though.

Black-Eyed Peas and Gumbo

I love the flavor of the gumbo....but I don't care for the thickness. When I make it again, I will cut the amount of oil significantly and all of the flour. I will add rice to the broth and keep it a thin soup. I used canned tomatoes (28 oz) and frozen okra. I repeat-- I love the flavor.
