Salsafied Chicken and Rice
I thought this was wonderful, I also coated my chicken in some taco seasoning before browning and I added a can of black beans (drained) and some frozen corn. I also used regular long grain rice, I just added and extra half of can of broth and just simmered it for 20 minutes covered and it turned out wonderful! After the rice cooked all the way I dumped the mixture into a caserole dish topped with the cheese and stuck it in a 350 degree oven until the cheese was melted. We dished it directly into a flour tortilla and it was perfect!! Thanks!
