Downeast Maine Pumpkin Bread
This smells so delicious while baking, and tastes equally delicious. I used 1/2 cup applesauce in place of half of the vegetable oil, substituted 1 cup of the sugar with 1 cup of brown sugar and used half whole wheat flour and half all-purpose. I also used pumpkin pie spice instead of nutmeg, cloves and ginger. For muffins, I would suggest baking for 25 minutes, and my loaf was done after one hour. Very good!

Lemon Chicken Tenders
I followed the recipe exactly, and it was delicious! I would spray the aluminum foil so the breadcrumbs don't stick, but other than that this is my new favorite chicken recipe!

Zucchini and Tomato Casserole
I didn't have dill weed, so I used dried basil, subbed olive oil for margarine and used mozzarella and parmesan cheeses. I also sautéed the zucchini before I placed it in the oven. I wish the zucchini would have been crisper(maybe next time I'll try roasting it? I think steaming would turn out the same way), but I still liked it. Per another review, I put Italian bread crumbs under the cheese. It had enough flavor (I also added red pepper flakes and oregano), and, most importantly, it was filling. I served it with a piece of sourdough bread. I would make this again with a few alterations.
