Carrot Cake III
I am a completely new baker/cook (a student too), and this came out *fantastic*.
The only difference I did is lessen the icing to 1/4 cup butter, and 1 cup sugar, and didn't add pecans to the icing, as I felt the creaminess is enough (and enough pecans would be in the cake).
The cake was half eaten right away by roomates, and the next morning, with the icing chilled it was even better!
One more thing I saw being done and wish I could do, is add raw pumpking seeds on top of the icing. I couldn't find any, but it tastes excellent.
