Penne Pasta with Veggies
Very tasty! A permanent recipe in my box! We're a family of 4 and there were PLENTY of leftovers. It's a pleasing dish to the eye too! My changes: I didn't use prosciutto and I reduced the amount of butter. I also used about half the sun-dried tomatoes (it was a cost thing!). I did as others did and baked it with foil on for 30 minutes and removed for the last 10, but I think next time I will leave the foil on for the entire bake time. If you want to add a little zing, I suggest adding a little crushed red peppers. All in all, this was a terrific dinner! I served it with an Italian garden salad.
