Not very fluffy, and a bit too salty. OK to use if you really need a pancake and are out of mix.

Holy Cow! We joined a CSA and get fresh produce delivered to our home each week. Somewhat random, the box this week came with Kale - a food I have never purchased nor eaten. (I think I have seen it used as a garnish in restaurants). We tried this recipe, and even my super-picky eater ate it! If a ten-year old , who lives for mac-n-cheese and chicken nuggets willingly eats a veggie, and asks for more, I call this recipe a WINNER! I had a small amount leftover, kept in a Ziploc baggie and it was (barely) edible the next day. Defiantly best hot and fresh from the oven.
