Beef Enchiladas
These were great! I love Tex-Mex, and living in Southern California it is impossible to find Tex-Mex anywhere! So I was glad to find this recipe. I despise soft corn tortillas, they fall apart & they taste unfinished (like someone forgot to cook them.) So I was glad to see a recipe that called for flour tortillas. This recipe was easy to make, very tasty & I had leftovers for the next couple of days. I would definately make this again if I had a gathering of people, as it could be made beforehand & popped in the oven!
