Salsa Chicken Rice Casserole
this was really easy. i did however do it a little different and it turned out great. i eliminated the cream of mushroom soup and only used 1 can of cream of chicken soup. i melted the cheese in the cream of chicken soup, then combined 2 cans rotel, 1 can southwest corn, onions, fresh garlic, and the rice. i then topped it with cheese and baked like that. my family loved it! it's definately an easy dish and a big hit.

Easy Key Lime Pie I
Loved this as a base recipe! I changed the recipe a little based on other reviews I read and it turned out perfectly. I was even told it was restaurant quality!! First I used 4 egg yolks, 1/2 fresh squeezed lime juice, 1/4 cup bottled lime juice, 1/4 cup bottled lemon juice, and 2 cans sweetened condensed milk. I used a premade 9 inch graham cracker crust and baked on 325 for 20 minutes. using the ingredients above fills the pie crust perfectly. i garnished the pie with lime zest, whipped cream, and lime slices. it was a huge hit at our fathers day cookout. great summertime pie and super easy to make. thanks a bunch!

Pot Roast in Foil
i poked holes in the roast and sprinkled with garlic powder, salt and pepper, and a little wosterschire. i also added some veggies and an extra can of cream of mushroom soup. in order to get the fall apart tender and the veggies done i cooked it on 325 for about 5.5 hours. turned out delicious!!!
