Good Old Fashioned Pancakes

These pancakes are the best I've had! I've been making another recipe from another cooking site for a few years now and they just don't live up to these babies! My two year old loves them and every morning she asks for pancakes. lol. These are almost too good!

Restaurant-Style Potato Salad

I adore potato salad! I could never quite make it as good as my Mom makes but with this recipe, I can! I think it was the addition of vinegar. I doubled the recipe and added 6 hard boiled eggs. I also added some diced up dill pickles (because the men in my house love them). I want to say that I followed the recipe exactly, but for one thing.....I peeled and chopped up my potatoes before boiling them. That way I didn't have to worry about some potatoes being done before others. They all cooked evenly and then I let them cool before mixing in the pre mixed dressing. Thanks for a great recipe.

Scrumptious Strawberry Shortcake

These were so delicious. I only added 3 tsp of baking powder and omitted the cream of tarter. I also added a tsp of vanilla extract. They came out nice and fluffy. I cut them into 6 large squares, brushed them with heavy cream and sprinkled sugar on top. What a treat! I actually found that they were better the next day. They were flakey and the edges were crispy. Went well with homemade whipped cream and strawberries that were cut hours earlier and mixed with sugar. I will definitely be making these again!

Broccoli Casserole

My family really enjoys this rice recipe. I've made it a few times now. I like to make it with 8 oz of processed cheese and 8 oz of shredded cheese. The men in my house just love this. I also like to take a box of stuffing mix, add it to about a 1/3 of a cup of melted butter and use this as a crispy, tasty topping! It makes great leftovers too. I'm serving this with the "Melt-In-Your-Mouth Meat loaf" recipe from this site tonight. For dessert we are going to have the "Scrumptious Strawberry Shortcake" also from this site!

Sunshine Chicken

I doubled the sauce and used real garlic instead of powdered. I also halved the ketchup, only because my picky toddler doesn't like it. Everyone loved this. Even my picky brother in law said that that is the best way to cook chicken thighs. The sauce coating caramelized on top and it was heavenly. I baked the chicken on a rack in the pan and kept flipping the it every fifteen minutes for an hour. It really came out crispy and all the fat dripped off into the pan. I'll be making this often.

Fry Bread Tacos II

I am reviewing the fry bread only. It's fantastic! I fried the dough in canola oil in my deep fryer and it was done in a flash. Then we all just topped our fried bread with beef and our favourite taco toppings. I can't believe how easy and delicious this was. It was extremely filling. I live with three men ( Husband and two brother in laws) and my 2 year old toddler so I doubled the dough recipe. I really didn't need to as one was plenty. I still have three left over. My picky daughter gobbled it right up. I'm going to make her one for dessert with cinnamon and sugar and a small scoop of ice cream. This fry bread recipe is definitely a keeper.

Cheddary Chicken Potpie

Very good pot pie. I made this tonight because I needed something I could just whip together, throw in the oven and forget about. Normally I make a pastry crust for my pot pies but I didn't have time to make the dough. I used Krusteaz pancake mix and it made a thick crust. Almost too thick. I also added two potatoes, corn and peas but left out the broccoli. I really enjoyed the flavour of the cream cheese! I asked my husband what I should rate this recipe as and he said 4 and a half. Since I can't do that I will rate it a 4. Definitely worth making!! Will make again.

Melt-In-Your-Mouth Meat Loaf

This meatloaf was ridiculously good! I prepared everything early in the morning and set my slow cooker to cook for the day. When we all finally got home the delicious smells coming from the slow cooker reminded us all how hard we worked today! I had also taken a frozen loaf of dough("Grandma VanDoren's White Bread" a recipe from this site) out to thaw and rise before we left for the day. It rose beautifully and I popped it in the oven. 30 mins later we had the best meatloaf sandwiches we've ever had! Thanks!

Grandma VanDoren's White Bread

I've been making this bread about three times a week since I discovered it a month ago. It is fantastic bread! I follow the directions for the most part, except for lowering the yeast to two tbsp. I don't like a strong yeast flavor and it still rises beautifully. I have large loaf pans so I always make either two loaves at a time or one loaf and buns. The buns from this bread are amazing! I roll out a rectangle from the dough and love to put either cheese and bacon or dried onion down and then roll up. I then take thread and slice the log of dough like you would for cinnamon buns, place on a baking sheet, let rise and bake at 350 for about 20 mins. Perfection! Edit Dec. 16 2009- Just wanted to update, I still make this bread several times a week! I love it! I've actually started to lower the yeast even more than two tbsp. I make it with 1.5 tbsp and it really tastes much better. Other than that I don't change a thing. If you haven't tried to make this bread yet, please do! You won't be disappointed. It's the only recipe I use!

Basic Flaky Pie Crust

I made this crust for the "Praline Pumpkin Pie II" recipe from this site. It worked out beautifully. I used half shortening and half butter and also doubled the recipe because I have a deep glass pie plate. I pressed the pecans and sugar down onto the bottom of the crust and prebaked it at 400 for 10 mins and then filled with filling and baked at 325 for an hour. I also covered the sides of my pie with foil for the whole baking process and it came out wonderful. This crust was truly delicious and flaky and got rave reviews from the whole family. Thanks for a great recipe!

Praline Pumpkin Pie II

I made this pie just to surprise my DH and BIL. They absolutely loved it! My Hubby said it was the best piece of pie he has ever eaten! I used half shortening and half butter for the crust and it was very flakey. I was worried after reading the reviews that the pie filling wouldn't set properly so I baked it for an hour (not including the pre-bake) at 325. It turned out beautifully and the filling was perfectly set. I definitely recommend that you should try this pie. Your family will thank you!

Golden Crescent Rolls

I wanted a dough for pigs in a blanket that didn't come from a can and I was very impressed with this! I used half butter, half shortening and put the dough in the oven to rise with the light on. It wasn't really rising so I turned the oven on to it's lowest temp and the dough puffed right up. Then I braided the dough around some of the dogs. I also rolled out long thick strands of dough and wrapped them around some dogs too. Let them rise in the warm oven again. Brushed them with an egg wash and presto! They baked up beautifully! Thanks for the recipe.
