Famous Butter Chicken

Pretty good. I just like the coating on chicken to get crunchy, and the bottom of this one was soggy. I should have turned it half way through. I followed the advice of adding 1/4 c. flour to the cracker crumbs, so I put 1 t. garlic salt in thinking it would need more flavor. It ended up a little too salty. I wouldn't do that again. I didn't factor that into my rating. I might try this one again.

Alaska Salmon Bake with Pecan Crunch Coating

A nice change to my plain poached salmon. My eight year old said it was okay, while my five year old said I should make it everyday. It's all a matter of taste.

Chicken Pot Pie II

An incredible Chicken Pot Pie! I followed the recipe exactly, and used my mom's recipe for crust which is incredibly easy. Put 2 2/3 c. flour and 1 1/2 t. salt in bowl. Add 3/4 c. veg. or canola oil, mix with a fork. Sprinkle with 4 T. ice cold water, 1 T. at a time until dough almost cleans side of the bowl. If it is too dry, add 1-2 T. oil. Do not add more water. If it's too wet, add a tiny bit of flour. That's it! Just press firmly into a ball, then roll between two pieces of wax paper. Do not handle it too much, or it will lose its flakiness. It has always turned out great! Thanks for a great chicken pot pie.

Bacon Mushroom Chicken

I did not do well with this recipe. My sauce turned into a clumped mess. That was fine, we just ate it without, but I felt the chicken was way too salty. Not my taste.

Shrimp Fettucine

An outstanding dish! I make shrimp scampi for our family and we love it. This had the exact same ingredients (using white wine instead of chicken broth), but this was saucy for the fettucine. I also added a jar of marinated artichokes (drained). My husband and I both stared at the last helping, which is his lunch for the next day, holding ourselves back from eating the rest of it. It's a keeper!

Marinated Pork Roast

Marinated for seven hours and still wasn't happy with the lack of flavor after grilling. I like a more bold flavor that penetrates all the meat rather than just the outside. I might try to cook it in the crock pot next time hoping that would bring more flavor. I did like the flavor, just wanted it to be stronger.

Rempel Family Meatloaf

I am not a big meatloaf fan, but I really liked this meatloaf. I read Connie's additional comments on her recipe before I made it and decided to adjust her recipe slightly. She said to use cheese flavored butter crackers, but I have never heard of such a thing, so I stuck with regular. She also suggested using only the flakes out of the onion soup mix, but that would just be dried onions. She thought it was too salty with the whole packet. I used half the packet and thought it could stand some more. I love the cheese in this meatloaf. One more thing, I never have steak sauce, so I substituted worchestershire sauce. It worked out nicely. A very good meatloaf, and I would make it again.

Blueberry Cheesecake Ice Cream

YUMMY! This ice cream is so creamy and rich. I usually use whole milk in ice cream recipes, but didn't have any for this one. I used 2% milk and wouldn't do it any different. It turns out so thick and creamy. If you don't want whole blueberries, just cook them a little longer and they will pop open.

Chicken Chipulos

Wasn't sure of the reaction I would get from my husband out of this one, but he loved it and even had a third helping! Since we are a small family of four (two little ones don't eat too much yet), I split the recipe into two 7x11 dishes and froze one. I do the same thing with lasagna. Great time saver!

Best Big, Fat, Chewy Chocolate Chip Cookie

These were very yummy. I didn't understand the need to melt the butter, then refrigerate the dough. Why not just use room temperature butter? So, I did it both ways, and they turned out great both times.

Mrs. Sigg's Snickerdoodles

A very good snickerdoodle. My snickerdoodle recipes have always turned out a flat cookie, but not this one. I like the flavor of more cream of tarter than the average snickerdoodle, too. It's a keeper.
