Beth's Spicy Oatmeal Raisin Cookies
The first batch I made per the recipe. Big hit. I wanted to make some more healthy versions of same. So I replaced the butter and shortening with smart balance. The brown sugar with 2/3 cup of Agava nectar and 1 table spoon of molasses.
The sugar was replaced by stevia.
I used whole wheat all purpose on the later batches also. One not old style rolled oats not quick oats.
I also had a batch I made with cranrasins. All were hits too. I had to mash them down to get the chewy flat look on all versions.
Great cookie I made a ton for Christmas gifts. They freeze well too.
