Pesto Scrambled Eggs
for a while i was so bored of scrambled eggs that i couldn't even think of them, but this reinvents them in a way that has totally re-ignited my interest! a word of caution: i used three eggs but the same amount of cheese and oil (well, butter) and it was just fine. there's no need to add all that extra fat!

White Chocolate Macadamia Nut Cookies IV
these are perfect. i made them for an event at my medical school and they got a ton of compliments! i did not have to fiddle with the recipe at all, they are delicious as-is.

Acorn Squash with Apple
this was outrageously good! it's good as a side dish AND maybe i'm weird, but i put icecream on it and had it for dessert, too. really, it tastes like crust-less apple pie. my only changes were in the interest of health: instead of brown sugar, i used 2 tb splenda and 1 tb sugar free maple syrup. i also used lite "i can't believe it's not butter." it still tasted amazing.
