Awesome Easy Pasta

Reviewed: Nov. 12, 2009
As written - I thought it was a good, basic recipe. The simmered chic broth and cream left the sauce runny but verrrrry tasty~ PLUS ~ I love that anyone can expand on it. Will make again with additions which may include: rosemary or even basil in the simmering cream (depending on taste trying to achive), I could also see sauting the chicken with perhaps garlic and onions. Thanks!

Rich and Simple French Onion Soup

Reviewed: Dec. 21, 2008
Ok - I have never had french onion soup before so I don't have anything to compare it to. However, since this is my first time in both making and eating it - what a great recipe to christen the occassion!! It was awesome!!! I have been converted! My boyfriend - a french onion soup expert - agreed that this was pretty darn good. We toasted the bread in the toaster first before adding it to the soup and cheese so it wouldn't get as soggy. Thank you Lori for opening my eyes! Will make many times from now!!

Best Tuna Melt (New Jersey Diner Style)

Very good! My daughter & boyfriend - although they "like" tuna - they really enjoyed this! I did add 2pc of crisped bacon per slice (under the first pc of cheese) - and layered the rest per instructions. I will make this again!

Holuski

Reviewed: Dec. 16, 2008
Awhile back - I made Bubble n Squeak from this site - which is essentially fried cabbage and ham and my family loved it. When I saw this - I was excited b/c adding noodles makes that cabbage "go farther." As written - I think it needs more seasonings - and although I added some onion/garlic powders to the cabbage saute (AND took the advice of adding kielbasa) - it still needed a little more "BAM!" I would make this again - it's very economical, super easy and a fast meal to put together and it IS tasty - but next time, I'll just be more liberal with the powders - OR maybe use more cabbage? I used a bag of the pre-cut coleslaw and it still seemed like the noodle to cabbage ratio was too high - remember cabbage seems to shrink by half once cooked...maybe I just need more cabbage and less noodles? Most of the taste is coming from the cabbage anyways. Either way - plan to keep to play around with. Thanks Kimberly!

Sweet Potato Minestrone

Reviewed: Dec. 16, 2008
Let me clarify this three star rating: This is a GREAT vegetarian recipe as written - however, my carnivore family LIKED it - they just didn't LOVE it...and its not because they need meat in every meal. Rather, they felt it lacked "heartiness." I made this same recipe again last night but used some macaroni noodles IPO barley and it was received much better the 2nd time. If you really need meat - I can imagine chicken would be a great addition. Another reason for the three stars - the sweet potato is suppossed to be the star of the soup, but really - with the Italian seasonings and tomatoes - the sweetness of the potato is too subtle. I could have subbed any potato in there and I doubt anyone would have known. That said - if your looking for something new for your stash of sweet potatoes - try this. I've made this twice and it was worth it both times - just depends how "thick" your family likes their soups! Thanks Stormywoman!

Chicken Caesar Pitas

Reviewed: Dec. 14, 2008
Whenever we go out to a local restaurant - my boyfriend has to eenie meenie minie moe between his fav. cesar pita or his fav. burger. I thought I'd bring one of his favorites to him. Yes -this is easy but it is awesome!! I fried the chicken w/ the spices using a few TBLS of butter vs. the whole boil thing. (I can't wait to try this grilled this summer). Like others - I skipped the crouton thing and we didn't miss it. I also found flavored pitas - which are awesome. A big thanks Michelle!

Great recipe. I like this recipe better than my current one. I have used half hot and half mild (or reg) sausage. I have also used buttermilk "grands" - the biscuits in a can when in a pinch. Either way - both parts of this recipe are good!

Campbell's® Slow Cooker Savory Pot Roast

Reviewed: Dec. 2, 2008
Campbell's - I have cooked many of your recipes before with varying rates of success and although this was good and savory - it still needs a liquid ingredient. An expert cook may know this but a novice may not. I started this recipe at 8am INCLUDING an added 1/2c beef broth (using 1/2c water and 1 tsp beef boullion) and turned my crockpot on low. Around noonish - I checked it and it was looking pretty dry. In my haste - I added (apprx) another cup of water - I literally filled a drinking cup with water and poured/stirred it in - so I'm guessing it was close to a cup measurement. It was still awesome and your house smells delicious. Other than the liquid addition (and going reduced sodium but not reduced fat soups) I didn't change a thing. A very easy "winter" dish to make!

Cake Balls

I followed almost all of Lexi's advice - which was very helpful - the cooling periods, the toothpicks, the alternate chocolate idea but we were still only so-so on the result. The kids liked them but the adults passed after one. I was optimistic after seeing all the positive reviews but I still have half a tray leftover and uneaten. Thanks anyways!

Onion Roasted Sweet Potatoes

Reviewed: Nov. 23, 2008
I would actually give this a 3.5 stars - it was slightly better than good but not quite "great." One little problem - the dried onions that come in the onion soup mix were still pretty hard though the potatoes were soft. Since I stired the dry soup mix with the oil and let sit in a bowl while I cubed potatoes - they had opportunity to soften but didn't. I also cooked in a 9x13 dish covered in foil so I don't think its that they dried out either. So every now and then - we'd get a bite of a "dry onion flake." I might try again because I'm combing two favorite ingredients: sweet potatoes and dry onion soup mix - perhaps I'll let sit longer in the oil mix? Perhaps add some addition chopped veggies (brocoli/carrots/mushrooms?) We'll see...thanks Jessica.

Southern Mushroom Soup

Reviewed: Nov. 16, 2008
I used the same ingredients - just in a slightly different order: I sauted the mushrooms, onions (and some garlic) in the butter. I then added the broth, cream and milk (reserving a few TBLS to mix with the flour). Brought to a boil and then added the flour/milk mix to thicken - reducing the heat and stirring well. Once ready to serve - I added some cooked crumbled bacon and sprinkled some cheese over each bowl. Served with french bread on the side. Awesome and easy meal with simple ingrediants. A keeper recipe for sure!!

Beef Stroganoff II

Reviewed: Nov. 11, 2008
One thing to consider: slow cook the meat = let the flavors meld (and onions cook). I've made this recipe several times. Sometimes I quick fry the meat, most times not. I add the soups, meat, onions and mushrooms to the crookpot and cook on low for a few hours. NOTE: if you quick fry with the flour - you will need a 1/2c beef broth or water also added to the crookpot b/c the flour on the meat will thicken even faster. A few hours later - while I'm boiling water for the noodles - I add the "full flavored" sour cream. We like this recipe - method may differ but the ingrediants are the same.
