As written the recipe was not a hit. I made again adding 2 eggs, 1/2 cup applesauce, 1/2 cup brown sugar, 1 tsp pumpkin pie spice and 1/2 teaspoon of cinnamon and they were a HUGE hit. They are my standard "pumpkin pie muffins" and everyone that tries them RAVES about how amazing they are. Still a super easy recipe. I bring it to every holiday gathering. I have also served them as cupcakes frosted with cream cheese frosting and even though they were just as well received and loved, I prefer them unfrosted.

Three of my favorite things: Chocolate, coconut and EASY! Yummy and simple. I used soy milk and soy margarine because I have a dairy allergy. Oh...and I accidentally used 1/4 c of margarine instead of 1/2 and it was perfect!
