Sweet & Hot Apple Slow Cooker Pork

I made this exactly as stated, and it was good but INCREDIBLY spicy. It was very hearty - a good warm, autumn meal, and the pork was delicious and fell right apart - but almost so spicy I couldn't enjoy the other flavors. I ate with a side of cottage cheese to counteract the spice. I'm extremely curious to see what this is like without any peppers. I do enjoy mild spice, so next time I will leave the peppers out completely and use red pepper flakes instead, which will allow me to start with a little and add more to taste. The two chipotle peppers in this recipe just seem a little too overpowering! I'm also considering the addition of some fresh apple slices and brown sugar. I do think it was a fun, autumn-y concept, and I will make again, although I will try toning down the spice from super-hot to mildly-hot.

Pumpkin Chili

I LOVE pumpkin recipes so I had to try this out. I used ground turkey instead of beef, but other than that, did not change a thing. I agree with others - the spices are pretty bland, which would make it a good kid's chili. I am not a huge fan of spicy food, but I still found myself adding a LOT more chili powder and a sprinkle of red pepper flakes after the first taste. I was disappointed that the pumpkin flavor was mostly lost unless I really looked for it - and the can of tomato juice was HUGE... I think I am used to my chili being a bit thicker. This is by no means a bad recipe - but I would probably choose one of my other favorite chili recipes before I chose this one again! I might try adding pumpkin to my favorite chili recipe on this site: "Laura's Quick Slow Cooker Chili."

Asian Roll Lettuce Wrap

I liked the concept of wrapping in lettuce, but these were a little messier than I anticipated - I preferred to eat more like a salad with a knife and fork. Chopping the vegetables was also a lot of work. Next time, I will definitely use a food processor/chopper (I didn't have one when I made these) or buy pre-chopped. I enjoyed the flexibility of this recipe - everyone can make theirs the way they want to. Next time I will leave out the radishes - they didn't do much for me!

Creamy Corn Chowder

I would give this recipe 10 stars if I could! I made it exactly as the recipe called for, and it is WONDERFUL. I didn't believe a thick, creamy soup could be healthy until I made this. Easy, healthy, delicious - wow!

Slow-Cooker Chicken Tortilla Soup

This is a fantastic, hearty, filling soup recipe. The baked tortillas and a lime wedge squeezed over and then tossed into the soup is what really took it from "very good" to "awesome." I am always looking for healthy, filling, easy recipes! Next time I might try adding some black beans and green onions as suggested by others.

Chicken Honey Nut Stir Fry

The cashews and green onions sprinkled on top are what really "make" this dish and take it from 4-star to 5-star, so don't skip those two magical ingredients! I loved this recipe - very easy, delicious and healthy. How often do you get a recipe that fulfills all three requirements!

Laura's Quick Slow Cooker Turkey Chili

I am eating this chili at the office for my lunch right now - and it is awesome! My boyfriend and I decided to make a pot of chili this weekend to bring for our lunches every day this week. It's chunkier than I am used to - but then again, i am used to runny, blended Cincinnati chili. Different, but I love it. I just e-mailed him and said "I LOVE THIS CHILI! I'm giving it 5 stars!" and I'm sure he'll agree! I topped mine with a sprinkle of cheese, but preferred to keep it healthier, so no chips or sour cream.

Baklava

This is an amazing recipe. The concept is very easy - but working with the phyllo dough takes some patience! Once you get past that, it's actually not a very complicated and uses mostly ingredients that you already have in the house, so you will likely only have to pick up the dough and nuts. I had my oven at 325 for 40 minutes (not 350 for 50 minutes) and it still started to burn - so I will definitely go with a lower heat next time. This baklava is delicious and impressive!

Peanut Butter Cup Cookies

I have been making this recipe for years using pre-made cookie dough - usually chocolate chip. If you get the cookie dough squares that break apart, you generally just have to cut each square in half and drop them into the mini muffin cup. Bake according to directions on the cookie package - usually 10-12 minutes at 350 F. No, they are not made from scratch, but they are QUICK AND EASY. I keep the cookie dough squares and peanut butter cups in my freezer at all times - and I can whip them out in a jiffy when I am invited somewhere last minute or I know friends are coming over. They have been a HUGE hit everywhere I've ever gone... people will start begging you to bring them.

Mint Chicken

I really enjoy quick and easy chicken recipes that I can whip together after work, and this one hit the spot. Being able to use my container-grown mint for the first time was a bonus! It was very lemony (which I love) but if you are not into lemon - you probably won't like this. I will definitely make this again - especially because it consists of ingredients I often have in the house.

Apple Stuffed Chicken Breast

My boyfriend and I really liked this recipe! We were pleasantly surprised at how the tiny amount of apples, cheese and breading made a big difference to a standard chicken breast. We have added this recipe to our favorites and will definitely make it again. The reason I have given it 4 out of 5 stars is because stuffing a chicken breast always gets at least a tiny bit complicated, and we really prefer "quick and easy" recipes. But that is a pretty minor downside considering that this is a different, fairly healthy recipe that can be made from things most people already have in the house!

Grilled Peanut Chicken

After reading the great reviews and seeing the simplicity of the recipe, I was SO disappointed when my grilled peanut chicken experience was so disastrous! I knew I'd have to thin out the sauce, per reviews, but I was afraid to thin it out TOO much and straying too far from the intended recipe. The sauce burned easily, had a cakey texture (even after I tried to thin it out with extra lime juice and soy sauce), was spicier than expected an the overall texture was... strange... in the end. I was so disappointed in the end that my boyfriend and I read the recipe over and over again to see if we had done something wrong, but we hadn't. I'd love to have someone who rated it 5-stars make this for me because I am still convinced that something went wrong, although I can't really point point WHAT, and I'd love to see what it's supposed to taste like... I gave it two stars because it was edible, but I would never make it again! So bummed! :(
