Mexican Pasta

This was a perfect quick meal for my family which includes a five year old and a three year old. I added about a half pound of ground turkey and kept it to half an onion. I only had chopped olives on hand but they worked out perfectly. I also used red bell pepper instead of green. My nine month old baby even liked the pasta pieces! Thanks for the great meal idea!

Best Ever Chocolate Chip Cookies III

This was good, but did lack a sweetness in the dough. I think I really missed the brown sugar. The only change I made was to use semi sweet bakers chocolate that I chunked up with a knife because I didn't have the chocolate chips. I'm glad I did this because the smaller bits of chocolate mixed into the dough to make it a bit more sweet. The texture was great, soft and fluffy on the inside and they held their shape well. The chocolate combo and ratio was perfect, I love my cookies filled with goodies and these fit the bill.

Butterscotch Fondue

This recipe is definitely caramel and really does need to be cooked much longer to create a consistency that is good for dipping. I probably cooked my for at least ten minutes if not longer. It was really very good, especially on apples!!

Shell-Roni

This recipe turned out pretty good and my small children liked it. I did change a few things to make it more flavorful and a bit more healthy. I used about three pieces of bacon, cooked in the pan first then taken out so I could wipe out the pan and brown the beef, onion and about a 1/2 tablespoon of minced garlic. This cut down on some of the fat transfer to the beef. I then added everything to the large sauce pan and used the Healthy Requests Cream Of Mushroom soup and 2% milk. I also used a cheddar jack combo for the cheese because that's what I had on hand. At this point I added some kosher salt and fresh ground pepper. I used Barilla Plus elbow macaroni noodles, they are multigrain and have protein and omega 3's. They did take a long time to cook in the sauce pan, but I think that it probably made the noodles more flavorful than cooking them in water first. Overall, it was a success even with my picky 2 and 4 year old.

2-Step Skillet Chicken Broccoli Divan

I tried this tonight but made quite a few changes. I used a little less chicken, fresh steamed broccoli and a bag of frozen peas and carrots. Instead of the cheddar I used Velveeta thinking it would be creamier. It was a little too thick with the Velveeta even after adding a little extra milk. I put it all in a double crust to make a pot pie. It was OK. I would possibly try this again with the recommended cheese.

Flank Steak a la Willyboy

I made this tonight and really liked the result. I did add some brown sugar to the marinade after reading some of the other reviews. I enjoy sweet meat, my husband does not. If you are like him, this is not for you. Even without the little bit of brown sugar I think it would have been too sweet for him.

Honey Ginger Carrots

This was a great idea. I had to modify it though because I thought I had ginger but didn't so I had to improvise with freshly ground nutmeg. It worked and my three year old who hates carrots ate three and said they tasted good, that's a huge compliment coming from him! I served them with BBQ ribs and my husband thought the flavor of the sweet carrots clashed with the ribs. I'll try them with something different next time.
