Apple Carrot Muffins
I was really skeptical about these muffins and my husband was even more so, but they are SO delicious!!!!!!!!

Five-Cheese Stuffed Shells
I live on a small Marine Corps Base in Japan and the small commissary didn't have ricotta cheese available, so I used feta cheese instead. Also, I don't like provolone cheese so I replaced that with mozzerella cheese and the recipe was SO SO good!!!!!

Funky Enchilada Casserole
LOVED this recipe!!! I actually added one can of enchilada sauce (1/2 in the mix and 1/2 on top) and more cheese on top.....SO SO good!!
