Zucchini Parmigiana
very good. I both baked and pan cooked my zucchini to see which was easier (based on others comments). It was easier to cook in a skillet with some olive oil. I mixed my ricotta cheese with low fat sour cream. I also added some salt. I will make this again.

Blueberry Zucchini Bread
Very good and so moist. The only change I made was using self rising flour, and omitting the salt, baking powder and baking soda.

Spinach Enchiladas
Really easy recipe and tasted pretty good, but something was missing. I couldn't put my finger on it. Maybe it needed a little more salt, meat or something that had some texture.
